    The sauce is plum tomatoes hand crushed and cooked with good olive oil and a basic sofrito. The sofrito was cooked until soft but not browned, then puréed and added to the tomatoes. The whole mixture was simmered for approximately 3 hours with previously roasted beef shank, short ribs, and pork belly (and their juices). The meat was removed after the simmer. Very little actual meat in the sauce.
