    Cacio e pepe: pasta water, 50g parmigiano reggiano, ground pepper

    The only reason it looks like there isn’t enough pepper is because there are some larger flecks that stand out. When you zoom in, the pasta is covered with it.

    I’m thinking of making zucchini carbonara and compensating for the absence of Guanciale/ Pancetta/ Bacon by toasting the peppercorns before like this recipe does.

    Which is neither here nor there, but if anyone thinks this is pointless or bad, let me know
