Pasta can be made healthy and full of anti-oxidants too. Beetroot Pink Pasta with veggies #shorts

HEALTHY ANTI-OXIDANT PASTA – Why I call it anti-oxidant because beet root has anti-oxidant qualities. Enjoy the pink pasta with lots of veggies and don’t overcook them as we want crunch of veggies inside pasta. Here is the recipe –
– Take 1 medium size boiled beet root in mixer jar
– Add some pasta water and make smooth puree
– now in a pan take some olive oil
– Add chopped garlic
– and choice of veggies- I took a bell pepper, broccoli and zucchini
– Add 1.5 cup Al Dante boiled (80%boiled) pasta
– add salt, chili flakes and toss the veggies but don’t over cook
– Now add beet root purée and some cream
– add very little pasta water and some freshly squeezed lemon juice
– Mix everything on the pan
– our anti-oxidant pasta is ready
– Garnish with Parmesan cheese and Basil leaves
