"Ricciarelli" Traditional Italian Almond Cookies Gluten Free Recipe

Italian almond cookies gluten free also know as “Ricciarelli” are delicious traditional Italian soft cookies with almonds and with few ingredients, they are easy to make and even easier to eat because you will hardly be able to resist the goodness of these almond cookies, a soft cookie with an intense flavor of almonds and orange scent covered with powdered sugar, you can not go wrong with these traditional Italian cookies, are perfect to make during the holidays, traditionally are also used as a gift for Christmas, these Tuscan cookies are originally from Siena, are ideal as an end of the meal accompanied by a sweet wine such as vin santo, but are good all year round and at any time of day and also are gluten free!

Recipe

.Peeled Almonds 200 g
.Sugar 25 g
.Powdered Sugar 140 g (90g cookies dough + 50g to cover)
.Water 15 g
.Egg White 30 g (1 medium size egg)
.Candied Orange 10 g (orange zest as an alternative)
.Salt 1 g

.Step 1: Toast the almonds at 170 °C /340 °F in a static oven for 8 minutes, when they are cold they are ready to be used.
.Step 2: Prepare the almond cookies dough and let it rest in a bowl covered with a cloth for about 90 minutes at room temperature in order to dry the dough.
.Step 3: form the “Ricciarelli” with the classic oval shape and thick about 1 to 2 centimeters and pass them in plenty of icing sugar, then place them on a baking sheet covered with parchment paper and cover them with a cloth for about 2 hours to further dry the dough and make sure they keep the shape once in the oven.
.Step 4: Bake in a static preheated oven at 150 °C / 300 °F for 15 minutes, once out of the oven do not touch them for about 10 minutes because they are breakable, then move them on a tray to cool completely, store them as normal cookies, they will be good and soft for at least a week, enjoy!
