Cannoli Italian Pastry

Servings – 5

INGREDIENTS
Unsalted butter – 60 grams
Sugar – 1 1/2 tablespoons
Dry white wine – 60 milliliters
Salt – 1/4 teaspoon
All purpose flour – 180 grams
Milk – 1 tablespoon
Oil – for frying
Ricotta cheese – 180 grams
Powdered sugar – 60 grams
Cinnamon powder – 1/8 teaspoon
Chocolate chips – 50 grams
Powdered sugar – for dusting

PREPARATION
1. In a mixing bowl, add 60 grams unsalted butter, 1 1/2 tablespoons sugar and mix it well.
2. Add 60 milliliters dry white wine and mix it well.
3. Add 1/4 teaspoon salt, 180 grams all purpose flour and knead it into a dough.
4. Rest the dough for 30 – 35 minutes.
5. Take a ball from dough and flatten it with the help of a rolling pin.
6. Cut out circles from it.
7. Take the circle and brush it with milk.
8. Now, take a aluminium foil cylinder and roll the dough over it. (See Video)
9. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
10. Remove it from heat and cool for about 10 – 15 minutes.
11. Remove the foil wrap from it.
12. In a mixing bowl, add 180 grams ricotta cheese, 60 grams powdered sugar, 1/8 teaspoon cinnamon powder and mix it well.
13. Fill the mixture into a piping bag. Take fried pastry and fill it with the prepared stuffing.
14. Add some chocolate chips on it.
15. Serve.
