SLOW LIVING IN ITALY// MY DAD'S VEGGIE PATCH + MOUNTAIN HIKE

Hey guys! Thank you so much for joining me for another video. please see below for recipes and links:

Tomato & Pea Pasta

Serve 2

Ingredients:

1 onion – finely chopped
3 garlic cloves – crushed
400g of tomato passata
150g of fresh or frozen peas (cooked for 5-10 minutes into some boiling water)
a handful of sundried tomatoes – roughly chopped
a bunch of fresh basil – roughly chopped
a drizzle of olive oil for cooking
salt & pepper to taste
2 portions of pasta of you choice

Add the oil to a frying pan. once hot add in he chopped onion and fry for 10 minutes until caramelised. Add in the crushed garlic and cook for 2 more minutes. add in the tomato passata, sun-dried tomatoes and basil and cook for another 10 minutes. Transfer to a blender and blend until smooth. Transfer it back to the pan and add the cooked peas.
Cook the pasta, drain it and add it to the pan with the tomato sauce. Combine everything together and enjoy!
