Italian Suppli. an Italian Fried Rice Ball with an Heart of Melted Mozzarella

Suppli is a classic appetizer that can be found in Rome, often eaten before pizza but also as street food when you need to eat something in the afternoon ^_^ It has become a classic of italian food and you can found different kind of Suppli in Italy. When you open the Suppli the mozzarella melt slowly from the rice and the flavor of tomato and cheese fills the air, you should try it !!!

INGREDIENTS for about 16 suppli
600 gr rice ( carnaroli or arborio)
70 gr Extra virgin olive oil
60 gr shallot
1 onion
3 cloves of garlic
1 liter vegetable stock
700 gr tomato sauce
half tablespoon tomato paste
50 gr butter
50 gr parmigiano
250 gr diced mozzarella
120 gr water
60 gr all purpose flour
breadcrumbs

INSTRUCTION

In a Frying Pan put 3 tablespoon extra virgin olive oil ( Evoo ) and 3 sliced clove of garlic. Add 1 finely chopped onion and let it brown lightly

Add 700 gr tomato sauce. Add salt, black pepper and half tablespoon tomato paste

Cover with a lid and let it cook for 30 minutes

In a pot put 40 gr Evoo, add 60 gr of finely chopped shallot
Add half ladle of vegetable stock and let the shallot cook

When the vegetable stock is faded add 600 gr rice ( carnaroli or arborio usually) and mix well

toast the rice over high heat until opalescent, turning it often not to burn it, a couple of minutes will be enough, if you listen carefully to the pot, you will hear it crackle imperceptibly.

add a couple of ladle of vegetable stock and cook for a couple of minutes then add half tomato sauce

cook a couple of minutes, add another ladle of vegetable broth and the remaining tomato sauce

Stir the rice and simmer well to mix flavors and prevent rice from sticking. Add salt if needed

As soon as the rice begins to dry, add a ladle of vegetables stock
Continue the cooking until the rice is “al dente”, just cooked, ( 15/20 minutes ) adding the vegetables stock when the previous one has been adsorbed

When the rice is ready, turn off the heat and stir 50 gr of butter and 50 gr of parmigiano into it. Mix well

take a baking tray and put the rice on it and let it cool. When is cool put in the fridge for another hour

take the tray from the fridge and pick up a handful of the rice, mold into small balls and firmly press it, place a cube of mozzarella into the center, then reshape into a ball.

Close the suppli as to seal the mozzarella inside and work with your hands to give it a oval shape.

Now for the breading let’s prepare a mixing bowl with 60 gr all purpose flour and 120 gr water mixed well and another bowl with breadcrumbs

Now let pass every supply first in the batter then in the breadcrumbs and put them on a tray and let the suppli rest in fridge for an hour

bring frying oil to a temperature of 160° C. – max 180° C. and immerse the suppli in abundant oil for a 8/10 minutes

To avoid that they will become too much brown turn them often during frying

Put suppli on a paper towel to remove excess oil and serve them while are still hot!
