Need a delicious vegetarian pasta dish? Here is a great recipe for you! The pasta dough in this recipe contains no eggs, so it is ALSO cholesterol friendly! Throw in some healthy fresh spinach, fresh cherry tomatoes and a little dried chili for some kick! To round off this cavatelli dish, you have a luscious white wine butter sauce and some freshly grated Parmesan cheese that will satisfy any pasta craving!

Cavatelli dough recipe (1 serving):
200 g semolina flour
100 g water
4 g salt

White wine butter sauce:
2 tbsp olive oil
1/2 shallot, chopped
3 cloves garlic, sliced
1/2 C cherry tomatoes (halved)
1 C fresh spinach
6 basil leaves
1/3 C white wine (I used a Chardonnay)
2 tbsp butter
3 tbsp grated Parmesan
salt and pepper to taste
