A simple raviolis recipe with a Puerto Rican flavor. The raviolis are made with wontons wrapping filled with ground pork. This recipe is my own and I hope you like it as much as I do.
Ingredients:
For the pork spices and flavoring; the “sofrito:”
4 to 6 garlic cloves
½ long cubanelle green pepper
5 or 6 mini sweet peppers
6-7 long culantro leaves
½ red bell pepper (optional)
1 teaspoon fresh or dry thyme
1 teaspoon fresh or dry rosemary
1 diced small onion
1 package wontons wrappers
1 tablespoon olive oil
1 pound ground pork
Salt and ground black pepper
Approximately 2 cups grated Italian cheese (parmesan, romano, provolone, etc.)
1 jar (25 ounces) favorite spaghetti sauce
1. Preheat oven 350ºF.
2. Prepare the “sofrito” by blending together the garlic, peppers, mini-sweet peppers, culantro leaves, red bell pepper, thyme, and rosemary.
3. Sauté the onion in 1 teaspoon olive oil over high temperature.
4. Once the onions are soft, add the mini-sweet peppers mixture. Stir and cook for 1 to 2 minutes.
5. Add the ground pork to the onions and peppers mixture.
6. Add salt and ground black pepper.
7. Brown meat until completely cook (10 to 15 minutes).
8. Once the meat is completely cook, add about ½ cup of grated cheese. Turn off stove.
9. Spread about ½ cup of tomato sauce over the bottom of the baking pan in which the raviolis will be cook. (You may have to spray your baking dish with non-stick cooking spray.)
10. Place a single wonton wrapper on the working surface, then place one teaspoon of the meat in the center of the wonton wrapper.
11. Wet the corners of the wonton wrapper with water.
12. Place a second wonton wrapper over the meat, meeting the corners of the wontons. Press together with your fingers to seal both wontons together, then press the corner with a fork.
13. You will make about 12 raviolis. Place about 6 raviolis over the bottom of the baking dish. Cover the raviolis with sauce and then cover with grated cheese. Repeat same previous step with a second layer.
14. Cover the dish and place in the oven and bake for 30 to 40 minutes at 350ºF oven, or until the cheese is completely melted and the sauce is bubbly.
15. Serve hot, and enjoy it.
