1 cup pearl couscous, cooked and cooled
1 can black beans, rinsed and drained
1 can black eyed peas, rinsed and drained
3 small bell peppers diced (Like using red, orange and yellow for a variety of colors)
1 red onion, diced
2 tomatoes, diced
1 cup corn kernels
1 cup fresh cilantro, chopped
2 tablespoon jalapeno, diced
For the dressing:
½ cup olive oil
2 tablespoon vinegar
Juice of 1 lime
½ teaspoon ground cumin
½ teaspoon paprika
½ teaspoon garlic powder
2 tablespoon honey
1 teaspoon salt
¼ teaspoon black pepper

Unironically my new favorite thing for summer. No oven, no cook time. Just a bit of prep, and then you're set for however long it lasts in the fridge.

Is there any cheese other than feta you'd recommend? I used to really like it, but then ate too much of it and now I can't stand it. But a lot of these recipes just don't seem like they'd work with a cheddar or other "standard" cheese.

Throwing stuff in a bowl and eating it throughtout the week sounds awful, actually. I can barely eat the same thing twice in a row.

If I weren't so grossed out by old chopped raw vegetables (the texture kills me every time, it makes me so queasy to touch a soggy tomato) I'd live off those types of meals easily. Instead I've accepted I'll be throwing out one leaf a day from the iceberg lettuce before chopping it, and will have to either make the salad on the go, or just resort to meal prepping boiled veggies instead.
Made this today, except used lentils instead of pearl couscous.. and added fresh parcely because whatev. But 🤤 thanks for sharing!
i think the feta make it taste good because it has a slight sour flavor. you can also use lemon or vinegar to achieve a similar taste

I can't do these because I get burnt out on food so quickly. I need novelty. However! I like to keep prepped ingredients around and just assemble them how I'm feeling that day. Some days, I want kalamata olives. Other days, I'm not feeling it. Having prepped ingredients lets me adjust, but still makes it super simple.
