ingredients:
• 1–1.5 lbs chicken
• 1 cup orzo
• 2 tbsp butter
• 1 shallot, diced
• 4-5 cloves garlic, minced
• 2–3 tbsp tomato paste
• 1–2 tsp chopped calabrian chiles
• ¼ cup vodka
• ~1 cup chicken broth (plus extra as needed)
• ¾–1 cup heavy cream
• ½ cup freshly grated parmesan
• salt, pepper, garlic powder, onion powder, smoked paprika, italian seasoning
• fresh basil
instructions:
– season chicken + sear until cooked through, then slice
– in the same pan, sauté shallot + garlic in butter
– add tomato paste + calabrian chiles and cook it down (key step)
– deglaze with vodka, let it simmer
– add broth + orzo, cook 12–15 min (stir often)
– add splashes of broth as needed to keep it creamy
– once orzo is tender, lower heat + stir in heavy cream
– add parmesan and mix until glossy + smooth
– add salt + pepper if needed
– top with sliced chicken, extra parm, and basil 🌿
