๐ Tomato & Garlic Confit Pasta
๐ Ingredients
โข 250 g pasta (9 oz)
โข 400 g cherry tomatoes (14 oz)
โข 1 head of garlic, peeled
โข ~1/2 cup olive oil (enough to cover)
โข 70 g butter (5 tbsp)
โข 1 tbsp chili oil (optional) ๐ถ๏ธ
โข 1 sprig thyme
โข 1 sprig rosemary
โข salt & pepper
โข 1/2 cup parmesan
โข fresh basil (optional)

๐ฉโ๐ณ Instructions
1. Confit
Add cherry tomatoes, garlic, thyme, and rosemary to a pot
Cover with olive oil
Cook on low heat for 30โ40 minutes
(do not boil)

2. Blend
Remove thyme and rosemary
Add to blender:
tomatoes, garlic, a bit of the oil, butter, chili oil, salt
Blend until smooth and creamy

3. Pasta
Cook pasta al dente
Reserve some pasta water

4. Finish
Add sauce to the pan with pasta
Mix well, adding a splash of pasta water
Stir in parmesan

Top with:
parmesan, fresh basil, and a drizzle of olive oil
