Bologna is the topic today, a beef and garlic bologna that is homemade. Now this is not your store bought variety of Bologna. This is an excellent homemade beef and garlic bologna recipe and it is a delicious easy recipe. From childhood to the present I have loved bologna. I eat it in a nice sandwich, cold out of the package or fresh out of the skittlet. Because fried bologna sandwiches are off the chain. I also like to roll up the bologna with some sharp cheddar cheese inside of it. The ways to eat bologna are endless for me. Now I must admit. I have neve bbq’d bologna. I would like to but my family does not share the love for this wonderful delicacy that I have. So I would have to eat the whole roll of bologna myself. Now, not that I could not do it, but I probably shouldn’t. To make this one I did take a nice brisket and grind it up to make my beef bologna. Then I added plenty of fresh and granulated garlic to give it that kick that I love. Now I think it could have used more garlic, since it is a garlic bologna. So if you love bologna like I do or you think it could be a little better, then try this easy recipe for homemade bologna. Now when I say easy recipe that is what I mean. This easy recipe is something that any novice sausage maker, charcuterie buff can easily make at home and we know homemade is always better. 10lbs Brisket (70%lean 30%fat)
10tbl Fresh Garlic Minced
3tbl Granulated Garlic
5tbl Granulated Onion
1 1/2tbl Black Pepper
1/2-1tbl White Pepper
1tbl Nutmeg
1tbl Corriander
4 Bay Leaves gound
2 1/2tbl Salt
2tsp Pink Salt (use manufacturer recommended amounts)
