

New to the subreddit but been snooping for a while, so thought I'd finally give making pizza at home a go. I've been working at pizza places for a few years now but never attempted doing it at home, but I've fallen into temptation and bought a couple of 14" pizza screens and a paddle!
Made a 14" thin crust with pepperoni and fresno peppers, can't remember the hydration ratio but one thing I need to remember is to buy new yeast (I used month-old/half dead yeast which made stretching an absolute pain… ended up using a rolling pin for the 2nd one).
If anyone has any tips, please let me know!
