🧾 Ingredients

Chicken
• 2 chicken breasts (about 300–350 g)
• 1 tsp salt
• ½ tsp black pepper
• 1 tbsp olive oil
• 1 tbsp butter
• 1 sprig rosemary
• 3 tbsp tomato paste
• 2 sheets or 1/2 cup cheese (mozzarella or mix)

Pasta
• 180–200 g spaghetti
• Water + 1 tbsp salt
• 1 tsp oil

Pasta Sauce
• 1 tbsp butter
• 2 garlic cloves (finely chopped)
• 1 small shallot (finely chopped)
• ¼ cup white wine
• ½ cup reserved pasta water (use as needed)
• ½ cup grated parmesan cheese
• Salt & pepper to taste

👨‍🍳 Recipe

1️⃣ Season chicken with salt & pepper.
2️⃣ Heat olive oil + butter in a pan, add rosemary.
3️⃣ Pan-sear chicken on medium heat until golden and cooked (4–5 min per side). Remove.

4️⃣ Cook spaghetti in salted water with oil until al dente. Reserve pasta water.

5️⃣ In the same pan, add butter, garlic & shallots. Sauté 30–40 seconds.
6️⃣ Deglaze with white wine. Cook 1–2 minutes until slightly reduced.
7️⃣ Add pasta, parmesan & pasta water. Toss until creamy. Adjust seasoning.

8️⃣ Slice chicken. Place in baking tray.
9️⃣ Spread tomato paste, add cheese.
🔟 Bake at 200°C (400°F) for 8–10 minutes until melted & lightly golden.

1️⃣1️⃣ Plate pasta, top with baked chicken. Serve hot.
