6 slices ( about 1074g ) of sirloins tip

Filling:
1/3 cup olive oil
2 tbsp finely chopped garlic
1 cup bread crumbs, I used panko bread crumbs
1/2 tsp dry oregano
1 cup grated Pecorino Romano cheese
1/2 cup finely chopped fresh parsley
12 slices Prosciutto de Parma
Ground black pepper

Sauce:
1/4 cup olive oil
1 cup diced yellow onion
2 tbsp finely chopped garlic
2 tbsp tomato paste
1 cup dry red wine, I used Castiglioni Chianti 2022
2 cups warm beef broth, I used 2 cups warm water + 3 tsp Better Than Bouillon beef base
796 ml Mutti passata
2 bay leaves
Fresh parsley stems
Ground black pepper

Cook in preheated 275 F oven until the bracioles are tender about 2.5 hours.
Sprinkle with chopped fresh parsley before serving.

  3. Don’t Ever Purchase Meat From Costco. Low Quality Beef And They Say It’s Wagyu It’s A Scam Grocery Store. I Lived In Japan For 12yrs My Health Was Great But When I Moved Back My Health With U.S. Foods My Health Deteriorated And The US Food Industry Is A Scam On It’s Grocery Markets. It’s All Chemical Raised Cows. Even American Wagyu Beef Is Chemically Enriched

  5. Perfectly executed, but I would have seasoned the raw beef with salt and pepper before browning. And adjusted the seasoning again after braising liquid was added. Zero salt? 🤔

  7. On second thought I need to subscribe as I've never seen anyone make decent sized braciiole. They are always the size of hot dogs. Loved what you did and appreciate the parchment to keep meat moist. Everyone else, including celebrity chefs, let the meat dry out and turn dark and then present it as if it looks appealing. Not!!! ❤❤❤

  8. This delicious braciole is a small fraction of what you'd pay in a restaurant. You use just the right force in pounding. Good. This is not brain surgery, but it involves a number of steps. Alas, most people cannot follow directions to completion. (a function of digital brain rot) This dish requires Costco wine for drinking, of a sort Dino Crocetti enjoyed back in Steubenville. I am not keen on winey meat. But if one wants to cheat, Reo's sauce is on sale at Costco until the 21st of Dec. It's expensive but really superior. Add the onion, maybe a garlic, you're good. If tomato paste and sauce are bitter, a pinch of sugar. Unless you are using garden tomatoes, one must always check.

For once, Im speechless! 😂 I grew up in a small city with outstanding Italian food and pastries but unfortunately these days cant seem to find so have always done a lot of cooking through the years to satisfy our need for authentic Italian. This was such an amazing video and can't wait to attempt to recreate your elevated and exceptional version of traditional dish! 😋👍Mangiamo!

I do not put prosciutto in my bracciole but I do make a paste of breadcrumbs, egg, garlic powder and romano cheese and skewer it with toothpicks saute it after making my meatballs and either a leftover pork chop or sautéed country sparerib added to my simmering sauce of lightly sauteed chopped onion crushed tomatoes, bay leaf, pepper and romano cheese…..voila Sunday or special sauce.

  14. Sirloin steak is excellent, and has less fat than a chicken breast, I used to buy them before COVID at Sam's club but they've gone up so high I enjoy getting a good one at my local Texas Roadhouse

  18. The last time I made this I had the butcher slice the beef on the slicing machine. Perfectly thin slices.
