Lots of people just like to cook hot and fast, which is fine for stir frying, chilli dishes etc., but cheese will curdle and go rubbery if you add it to a high heat.
You can turn the heat up again if you reeeeally want to, but only when the cheese is fully integrated.
I make meatballs every 2-3 weeks to have & freeze.. you can toss a couple @ a time "in" to your sauce, (red sauce & or cheese sauces & smash w/ a potato masher for great tasting meatsauce to "Amp it up"!! Great eats @to have on hand especially in the cold "cold" months!! ❤..makes a terrific "homemade" hamburger & or a ground turkey "hamburger helper"!! Yummmy…👍🫡🎄🎄🥳😍💯.. easy breezy meatballs too!! Delicious!

Tip..premix the flour into the butter, it will prevent lumps!
Always make sure butter and milk is cold to help prevent clumps.

You basically made a bechamel sauce and added cheese. Sounds good, but I use milk not cream and definitely add some nutmeg to the sauce.

She didn’t cover it with enough cheese. That was too saucy but some of us love saucy macaroni as opposed to the original baked macaroni.
