Some dishes do more than just taste good they bring back memories. This Smoked Salmon Salad is one of those for me. I used to make it every single night at an Italian restaurant in London, and it quickly became one of our most popular antipasti. In fact, I used to serve it to the original Superman actor… ! He would come in almost every day, and this was his favourite dish. Twenty years later, it still brings back beautiful memories every time I make it.

INGREDIENTS:
100 g / 3.5oz smoked salmon
8 pcs black olive
Cucumber slices cut into halves
1 Tbsp of capers
120 g / 4.2oz baby spinach & rocket/arugula
Dill chopped
1 lemon
Extra virgin olive oil EVOO
Salt & pepper

METHOD:
1) Slice the lemon in half. Cut a few thin slices from one half and set them aside for garnish.
2) Pour 6–8 tablespoons of EVOO into a glass, then juice the lemon half directly into it using a strainer.
3) Chop half of the black olives into small pieces and slice the other half into larger chunks.
4) In a large bowl, combine baby spinach and rocket, then drizzle generously with EVOO. Add the large olive chunks and capers, then toss in the sliced cucumber, a pinch of fresh dill, and season with salt and pepper to taste.
5) Gently mix the salad using your hands to make sure everything is evenly coated, before you shape the salad into a ball, then place it on a flat plate, creating a mound.
6) Carefully cover the salad with slices of smoked salmon, starting from the base and working your way to the top, until it’s completely covered, overlapping each slice only slightly.
7) Drizzle the lemon juice and EVOO mixture all over the salmon and add an extra squeeze of lemon juice on top. Then, sprinkle the chopped olives and dill to finish.

HOW TO SERVE:
Drizzle the lemon and EVOO mixture generously over the smoked salmon, chopped olives and dillβ€”making sure every surface is beautifully coated. Finish with a few fresh lemon slices on the side for an extra citrusy touch and a pop of color.

  1. Probably very tasty… But i would not cover the salad completly like that. It just looks like a mountain of meat.
    Perhaps make rolls of the salmon leaning on the salad-mountain. Cut the meat of 1 lemon slice in the middle to the skin, twist it and put it on the top of the mountain. Put 1 branch of dild on each side of the lemon. Drisle the whole thing with chopped dild and finely chopped olives. Put a caper in the top hole of every salmon-roll. Rest of the lemon slices on the side, just like in the video.

  4. The Italian salads are great! I have fresh salmon fairly regularly. It is a great fish and loads of health benefits, it always makes me feel full for a few days too so it works out very cost effective for me because I do not eat too much for the next few days. A great presentation.

  11. I ordered a salad just like this by accident on my first day in Rome last year. The menu just said "salmon salad." I was expecting grilled or otherwise cooked. While I enjoy smoked salmon well enough, it was a bit of a surprise to have so much of it.😊

  12. Hey man, I found a new tip. In some areas of the US, we get smoked pork jowl. It tastes a lot like our bacon, but the fat is different. There is a major difference between the fat from the belly like our bacon, vs the fat from the head/jowl. The flavor itself, of course, is much different from guanciale, and almost identical to our smoked bacon, but you can achieve the texture of using guanciale, and it's usually cheaper than bacon as well. Sauce forms properly and doesn't congeal nearly as quickly, and I've even had it barely congeal at all when it sits. Also, thanks by the way. You are soley responsible for taking my pasta game to the next level. And also showing me that the reason you Italians are so protective of your recipes is that they just good, and pass on the fundamentals of the cuisine. Once you gain command of the base recipes, you can make delicious pastas out of damn near anything you can find.
