Ingredients
* 1 cup Parmesan Cheese (grated) 
* 4 cloves Garlic
* 1 cup Walnuts (chopped) 
* ½ tsp Thyme (dried) 
* 2 – 3 lbs Butternut Squash 
* 4 tbsp Butter
* 1 – 2 slices Bread (salted rosemary, garlic) 
* ½ tsp Rosemary (dried) 
* ½ – 1 tsp Fresh Ground Black Pepper
* ½ – 1 tsp Pink Himalayan Salt
* Vito & Joe’s Extra Virgin Olive Oil

How to Prepare
1. Preheat the oven to 400°F.
2. Prepare butternut squash: peel, remove seeds, and cut into 1-inch cubes.
3. Toss squash cubes with olive oil, herbs, and garlic.
4. Add ¾ of chopped walnuts and spread mixture on a lined cookie sheet.
5. Roast in the oven for 20 minutes.
6. Drizzle with excess oil from the parchment paper.
7. Reduce the oven temperature to 325°F.
8. Add butter, grated parmesan, and torn bread pieces to the roasted squash. Stir.
9. Transfer to a serving dish and top with remaining walnuts and more parmesan.
10. Bake for 15-20 minutes.
11. Enjoy!
