Creamy Penne Pasta
Ingredients:
* 1 pound penne pasta
* 1/2 cup heavy cream
* 1/2 cup grated Parmesan cheese
* 1/4 cup chopped fresh basil
* 1/4 cup chopped red onion
* 1/4 cup sun-dried tomatoes, chopped
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 cup olive oil
* 2 cloves garlic, minced
Instructions:
1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package directions.
2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute, or until fragrant.
3. Add the heavy cream, Parmesan cheese, basil, red onion, sun-dried tomatoes, salt, and pepper to the skillet. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
4. Drain the pasta and add it to the skillet with the sauce. Stir to combine.
5. Serve immediately.
Tips:
* To make the sauce ahead of time, cook it according to the directions and then let it cool completely. Store the sauce in an airtight container in the refrigerator for up to 3 days. When you’re ready to serve, reheat the sauce over low heat until warmed through.
* If you don’t have any fresh basil on hand, you can use 1/2 teaspoon dried basil instead.
* For a vegetarian version of this dish, omit the Parmesan cheese.
