    dough:
    1/2 cup warm water
    1/4 cup milk
    1 tbsp sugar
    1 tsp active dry yeast

    – proof yeast for 10 min

    2 cups all purpose flour (add more flour if required)
    salt
    1/4 cup olive oil

    – knead into a smooth ball of dough
    – rest covered in a warm place for 1 1/2 hr
    – divide and form circles
    – rest the balls again covered for 1/2hr
    – roll each circle out thinly using as less flour as possible

    topping:
    za’atar – 1/4 cup olive oil + 1/4 cup za’atar
    mozzarella

    – add toppings to the base
    – bake at 220°C for 10-15 min till golden
