This is not a Da Michele style … But a proper neapolitan pizza margherita.. Possibly even better than da Michele .. not my favourite in town 😉

The sauce to cheese ratio, and the meltiness, looks perfect. The crust looks a bit overcooked for a Da Michele clone (but, coming from New Haven, I would not complain at all lol). Not sure how you can achieve both in a small oven. Perhaps quicker initial rotation, then dome and rotate, dome and rotate, dome and rotate, etc…

Good job! As variatons from margherita you can ad some slices of aubergine cooled before in a pan or add some slices of raw ham at the end.
