Soup for the Soul | Italian Sausage Gnocchi Soup Recipe

INGREDIENTS:
1 pd. Italian sausage – casing removed
1 pd. potato gnocchi
5 cups chicken broth
1 cup diced onion
1 medium diced red bell pepper
2 diced stalks celery
2 cups fresh baby spinach
14.5 oz. can crushed tomatoes
2 tsp. minced garlic
2 Tbsp. tomato paste
1 tsp. Fennel seeds
2 tsp. Italian seasonings
1 tsp. Better Than Chicken Bouillon
1/4 tsp. each and to taste – salt and black pepper
grated parmesan cheese

In a soup pot on medium heat add bacon fat/oil and sausage (loose from casing).
Cook and chop until no longer pink.

Add onions, bell peppers, celery, salt and black pepper.
Cook and stir 3-4 minutes.
Add minced garlic, fennel seeds and tomato paste.
Cook and stir for 1 minute or until paste is incorporated.
Add Italian seasonings. Cook and stir 1 minute.

Add chicken broth and tomatoes. Turn heat up to bring to simmer.
Add Better Than Chicken Bouillon. Stir, cover and cook for 15 minutes.

Add gnocchi and spinach. Taste for any seasonings.
Cook for 3-4 minutes or until gnocchi is soft and tender.

Serve. Garnish with grated Parmesan cheese.
Enjoy.

  5. That looks delicious! Thinking of shelf stable ingredients, it could be made with any dried pasta. Iโ€™ve never seen or heard of freeze dried gnocchi. Wish that was a thing. A little home grown spinach , voila, a great home cooked meal! Thanks for the recipe!
