Big fat polish dough ball!

  1. Had to post this! I’m in love with this dough ball. Recently got my Roccbox Gozney Pizza oven and I’ve been diving deep into how to make the perfect dough. Made this 75% Hydration Poolish Dough Ball (if that’s what you call it lol).

    1000g flour, 700g water, 30g salt, 5g dried yeast (really hard to get fresh yeast near me).

    I’ll be baking it tomorrow after 16-24 hours in the fridge. But… does anyone else feel this sense of pride in their dough ball? It was a such a wet dough ball, so sticky, so messy, so hard to work with. But I got there in the end and I just love this dough ball!!!!! Is this normal? 😀
