Currently working through a bag. No general complaints but nothing spectacular either. Biggest issue for me so far has been consistency of final product with this flour. But that could simply be more my error than the flour so who knows. In general i’d buy it again.

Significantly cheaper than other 00. I’ve had no issues so far but like you am skeptical because of the price.

I’ve used it because I can get it at Whole Foods. Works well, solid flour IMO. My results are very slightly better with caputo blue bag I think, but not enough that anybody but me will notice or care.

From the bag’s nutrition label, it has 4g protein per 30g portion or 13.3% protein which is higher than any of the Caputo blends (12.5%) at the Tipo 00 mill size.
Higher gluten content means more chew, less airy, less delicate structure….
I, myself, like less protein and a more delicate crust, but to each his own.

I’ve used it and have had some mild success with it. I find that caputo, le5 stagioni, and king arthur 00 flours are far superior at taking on hydration, are higher performing, and yield a better overall product. I’ve even had better results with king arthur bread flour than this cento product. Not saying it’s a bad product, just trying to provide my experience with some other 00’s.
