1. DON’T add too much water when making this – otherwise you’ll end up with a strange type of chicken soup!
2. For this recipe, I usually use carrot & celery but feel free to experiment with other vegetables to your taste.

1 ONION
1 CLOVE OF GARLIC
700-750g CHICKEN (LEGS, THIGHS, WINGS)
2 CARROTS
2 STICKS OF CELERY
5 POTATOES
6/7 CHERRY TOMATOES
PARMESAN
OLIVE OIL
BREADCRUMBS
SALT
WATER
This great, easy to make chicken dinner recipe really takes me back to being a kid. It was always a favourite in our household and for good reason – it’s delicious! It’s perfect for family dinners and takes no time to prepare. When you finish eating, make sure you do the famous ‘scarpetta’ with those lovely juices. Grab some bread and mop it up for a final treat! Yum!
