My children always wondered why this dish was called Chicken Parm. As with most Italian dishes, Americans have come up with their own versions. In Italy, the chicken is topped with sauce and a sprinkle of grated cheese. There is no fresh mozzarella added to the chicken. I actually prefer adding mozzarella on top, and so do my kids.
