Recipe: Ravioli

Serves: 4
Ingredients:
FOR RAVIOLI
• ½ cup all-purpose flour
• ½ cup whole wheat flour
• salt to taste
• 2 large eggs
• Few drops of water
• 2 tsp olive oil
FOR MARINARA
• 1 tbsp olive oil
• ½ finely chopped medium onion
• 2-3 minced garlic cloves
• 1 cup crushed tomatoes
• Black pepper and salt to taste
FOR CHEESE STUFFING
• ½ cup ricotta cheese
• 1/3 cup grated mozzarella cheese
• 1/3 cup grated parmesan cheese
• 2 tsp garlic powder
• Salt and black pepper to taste
• Flour (to dust the surface)
• Water to boil (as per the pan size)
• Few drops of oil and salt (for boiling water)
• Few drops of olive oil (to drizzle)
• Dried oregano and grated parmesan cheese (for garnishing)
Instructions:
FOR RAVIOLI
• ½ cup all-purpose flour + ½ cup whole wheat flour
• Add salt and mix it and make two wells
• Add 2 eggs in each well
• Mix it thoroughly until well combined
• If mixture is dry, knead with wet hands
• Drizzle 2 tsp olive oil, knead until smooth firm dough
• Wrap in cling wrap and refrigerate for 30 minutes
FOR MARINARA
• Add 1 tbsp olive oil
• Add ½ finely chopped medium onion and sauté for 1-2 minutes
• Add 2-3 minced garlic cloves
• Add 1 cup crushed tomatoes and give it a stir
• Add black pepper and salt to taste
• Cook for 5-7 mins or until little bubbly
FOR CHEESE STUFFING
• ½ cup ricotta cheese + 1/3 cup grated mozzarella cheese + 1/3 cup grated parmesan cheese
• Add 2 tsp garlic powder
• Add salt and black pepper to taste and mix until well combined
• Dust the work surface with flour
• Cut the dough into 4 equal parts
• Cover remaining dough with kitchen towel
• Roll out dough into ¼ inch thickness, cut out into heart shape
• Fill about ½ tsp cheese filling into 1 heart cut out brush the edges with water and place another cut onto it and seal with fork
• Boil the water and add oil and salt to it
• Add raviolis and cook for 10-15 minutes
• Remove from the pan and place on the plate
• Drizzle some olive oil and toss them
• Place marinara into serving bowl, place ravioli and sprinkle dried oregano and grated parmesan cheese.
