Authentic Vrascioli
Ingredients:
1 lb ground sirloin
1 loaf of stale bread
2 Eggs
2 Handfuls of Grated Parmigiano Reggiano
2 stems of Parsley
2 Garlic Cloves
1 Tbsp Salt
Oil to fry
Step 1:
Soak bread in water for 10 mins. After soaking squeeze out all water and place in another bowl. Now add two large eggs, in the bowl with the bread. Next step add your pound of ground meat and chopped up parsley. Finish the mixture with 2 large handfuls of grated parmigiano reggiano, 2 cloves of minced garlic, and a tablespoon of salt.
Step 2:
Begin thoroughly mixing all ingredients together with your hands. Make sure everything is evenly distributed (look at video to see the desired consistency).
Step 3:
Begin shaping the vrascioli by rolling the mixture between hands into a long shape. If you prefer to, you can also shape into circles.
Step 4:
Fill pan with enough oil to cover about half the vrascioli. Once the oil is hot enough to fry, begin laying vrascioli on the pan occasionally rolling to cook evenly. Cook until all sides are brown and crispy, usually about 8~10 mins. When finished place on paper towels to soak up excess oil.
Now your Vrascioli are ready to eat
