For Women’s Day 2021 we will show you how to prepare an italian pineapple Mimosa Cake: with sponge cake and Diplomatic cream, and Pineapple with non-alcoholic syrup.
We will show you how to prepare each part of the recipe and how to decorate it, to make everything very simple.

INGREDIENTS
Sponge cake (20 cm diameter)
4 eggs (280 gr)
3/4 cup (160 gr) caster sugar
1 cup (160 gr) flour
1 vanilla bean
1 lemon peel

Diplomatic Cream
4 yolks (80 gr)
9 tbsp (120 gr) of caster sugar
5 tbsp (40 gr) of cornflour
1 vanilla bean
2 cups (500 ml) of milk
0.8 cup (200 ml) fresh cream
4.2 oz (120 gr) of Mascarpone
3 tbsp of caster sugar

In the Pineapple version a package of Pineapple in syrup is added with 12 oz (340 gr) of Pineapple
