An easy to prepare favourite. Gnocchi, served in a simple Spinach Parmesan Sauce.
Gnocchi Ingredients List
Gnocchi Dumpling
• Potatoes (Peeled and Mashed) – 300g
• Plain Flour – 300g
• Egg – 1
• Salt – 1 Tsp
• Pepper – 1 Tsp
** Reserve some extra flour for dusting and if the dough is too wet.
Spinach and Parmesan Sauce (For 1 Portions Serving)
• Spinach Leaves – 1 Cup
• Parmesan Cheese – 1 Cup
• Nutmeg – ½ Nut
• Salt – 1 Tsp
• Pepper – 1 Tsp
• Fresh Garlic – 2 Cloves
• Chilli Flakes – 1 Tsp
• Olive Oil – 1 Tbsp
• Thick Cream – 3 Tbsp
You can add more spinach or cheese if desired.
** Time Taken: Approximately 45 mins.
Preparation
(Dumplings)
1. Wash and Peel Potatoes
2. Boil Potatoes till cooked and mash them to a fine consistency.
3. Let the potato mash cool down so that it can be safely handled without scalding
4. Slowly add the plain flour to the mashed potatoes, folding in the dry to wet ingredients
5. Add an egg into the mix and continue folding till it is all blended.
6. Season with Salt and Pepper.
7. Scatter some plain flour on a dry surface to prevent the dough from sticking
8. Begin to knead the dough till it attains a firm consistency.
9. Shape the dough into a ball shape and use a knife to divide it into quarters.
10. Roll out one quarter into a roll and use your knife to cut out pillow tabs from it.
11. Dust liberally with flour to prevent sticking
12. To cook the dumplings, all you need to do is to gently introduce the dumplings into hot salted boiling water.
13. The dumplings will float when it is fully cooked.
14. Remove and drain the cooked dumplings and set aside.
(Spinach Parmesan Sauce)
1. For the Sauce, You will need to sauté 2 cloves of chopped garlic and add 1 cup of Spinach Leaves.
2. Add 3 Tbsp of Thick Cream and stir in.
3. You will then add a pinch of chilli flakes for heat along with Salt and Pepper for taste,
4. Turn off the heat
5. You round off by adding a cup of Parmesan Cheese
6. You can choose to finish off by garnishing with shavings of nutmeg and chopped parsley.
