700g -5 5/8 cups of plain flour (plus extra for kneading)
300g – 2.7 cups of semolina
40g – 3 tablespoons of salt
20g – 2 tablespoons of white sugar
20g – 2 tablespoons of dry yeast
1L – 4 cups of full cream milk
20ml – 3 tablespoons of EVOO
Sunflower oil for frying

Ingredients for the filling:
Mozzarella – cut into cubes
Crushed peeled tomatoes
Capers
