Thanks for checking out my homemade potato gnocchi recipe! My mother-in-law taught me this recipe over 30 years ago, and I can’t wait for you to try it yourself.
Here’s what you’ll need:
– 4 cups flour (I like King Arthur unbleached flour)
– 5 pounds Idaho potatoes
– 2 eggs
– 1/2 stick unsalted butter
– 2-3 teaspoon salt
Boil the Idaho potatoes with the skin intact. Cook until you’re able to slide a knife into the potato. It’s important to make sure that they’re not overcooked.
Pour the flour onto a hard surface and create a bowl-like shape.
Peel the potatoes and pass them through a ricer onto the top of the flour. If you don’t have a ricer, a food processor will do.
Add the butter and begin to incorporate.
Add the eggs and butter and continue to knead until the dough it shaped like a ball.
Begin to make one inch thick logs and cut into 1/2 – 1 inch pieces
Lay each piece on a flour surface until they’re ready to cook.
Boil a large pot of salted water to a gentle boil. Add desired amount of gnocchi. Stir lightly, and wait for all of the gnocchi to rise to the top of the pot.
Serve with sauce and freshly grated cheese.
