Pecorino. Yes, like the cheese. Same word, same root: pecora, Italian for sheep. And the story goes that the sheep loved these grapes so much they’d eat them before anyone could harvest.

This one is the Ciprea from Simone Capecci, in the Marche on the Adriatic side of Italy, and it runs about $20. Certified organic. Yellow fruit, a little sage, more body than you expect from a white.

Two rules for this series: nothing over $30, and you have to be able to actually find it.

If your store doesn’t have this exact bottle, just ask for a Pecorino. That’s the whole trick.
