Amarone della Valpolicella grapes are hand-dried for three to four months before fermenting, losing up to 40% of their water and concentrating sugar, glycerol, and flavor. It’s called the appassimento method, and a happy 1930s accident with it created one of the world’s boldest, richest reds.
