An exclusive five-course modern Italian dinner.
Empire Grill at Raffles Sentosa Singapore will host An Evening with Planeta on 23 September 2026, bringing together a specially curated menu from Chef Bjoern Alexander and wines from one of Sicily’s most respected family-owned estates. Even better, diners will be guided through the wines by Santi Planeta, co-founder of Planeta Winery and a member of a family whose winemaking history on the island stretches back more than 17 generations.

The one-night-only dinner plays to Empire Grill’s strengths. The resort’s signature modern Italian restaurant is inspired by the rustic warmth and conviviality of Tuscan cooking, with wood-fired meats, seafood and handmade pastas at the heart of its offering. For this event, Cluster Director of Culinary Chef Bjoern Alexander has created a menu that gives the Sicilian wines plenty of room to shine.

The evening opens with Buffalo Burrata, elevated with sea urchin and black truffle and paired with Planeta La Segreta Grillo DOC 2025. Japanese tuna follows with rice vinegar, acacia honey, fresh almonds and pickled plums, served alongside Planeta Chardonnay Sicilia DOC from magnum.
From there, the menu moves into richer territory. Spaghettini with wood-fired squid, nori, pine nut butter and chilli meets a 2024 Planeta Chardonnay from Menfi, before Murray Cod with dried scallops, sour tomato and black pepper is matched with Planeta Etna Rosso DOC 2022.
The final savoury course brings New Zealand lamb seasoned with an Oriental spice mix and served with grilled baby gem and a cabbage roll filled with lamb sausage. Its partner in the glass is Planeta Santa Cecilia Nero d’Avola Noto DOC 2022, showcasing one of Sicily’s most important indigenous red grape varieties.
Dessert ends things on an indulgent note with Basque Cheesecake, caramelised banana, caramel and orange, paired with the sweet Planeta Passito di Noto DOC 2025.
While the food promises plenty, the presence of Santi Planeta adds another layer to the experience. Planeta has vineyards across five distinct Sicilian territories, working with both indigenous and international grape varieties to express the diversity of the island. Throughout dinner, Santi will share the stories behind the estate, its vineyards and the wines accompanying each course.
