Fort Worth’s upcoming spaghetti western restaurant will serve spicy Cowgirl Italian sandwiches for lunch and red wine T-bone lamb for dinner.

La Pistola will open in the former Taco Heads restaurant across from Dickies Arena this September. In an emailed press release, the restaurant announced its head chef, Austin Wyatt, as well as a glimpse into the menu.

Wyatt is a graduate of The Culinary School of Fort Worth and has trained with the Stockyard’s Star Cafe Executive Chef Victor Villarreal as well as other local chefs. This will be his first time serving in the executive chef role.

The menu reflects the retro cowboy Italian mood with elevated Italian sandwiches on fresh focaccia and a “late night bites” section with fried bologna. Eats Beats reporter Bud Kennedy refers to the Italian restaurant as something “Beth Dutton would love.”

The menu consists of mid-priced elevated Italian sandwiches, fresh pastas, steaks, roasted chicken and seafood.

A rosewood ranch grilled steak sandwich is already confirmed. Classics like the “Cowgirl Italian” will have salami, mortadella and soppressata with the lettuce and tomato works. Of course there is a chicken parm and a mortadella on focaccia with burrata. The Camille will have spicy soppressata, some more spicy calabrese, pecorino cheese, whipped ricotta, and hot honey on focaccia.

A bolognese and shrimp piccata will also be served during lunch.

For dinner, a fried veal Milanese and red wine lamb T-bone will be standouts. Charbroiled branzino and roasted chicken are lighter options. And if you want to go casual, a meatball sandwich is on the evening menu.

A fun section of “late night bites” have fried bologna with salt and vinegar chips as well as a tinned fish platter.

Jeffrey Yarbrough and Camille McDonald helped launch the successful Teddy Wong’s dumpling restaurant and are the co-owners behind La Pistola Kitchen + Saloon.

When the two first bought the Montgomery Street space, they weren’t sure what the concept would be, but knew they’d create “something that belongs in Fort Worth.”

La Pistola was at first just a placeholder name until they knew for certain their concept would be a retro 1970s western themed space serving entrées and pastas, and specialty Italian sandwiches with a bar. The moniker means “the gun” in Italian and Spanish.

La Pistola will open in September at 1812 Montgomery St. in Fort Worth.
