  1. Hallo, ja, ich kenne das Rezept aus der Provence, nahe Marseille und habe es in Deutschland schon des Öfteren genutzt. Aus Erfahrung habe ich aber auf gut 1/3 Zucker verzichtet und auch auf Zimt, der meiner Auffassung nicht im Wein verloren hat. Schmeckt heute noch gut, das es ein Aperitiv ist und kein klassischer Wein hält er auch in Flaschen und Fässern eine Ewigkeit. Gruß Harry aus Engelskichen nahe von Köln.

  2. nochmal von Harry aus Engelskirchen: der Rotwein in meinem Rezept wird erst nach 6 Wochen hinzugefügt, wenn ich die Reste der Walnüsse ausgesiebt habe. Gruß

  3. We in Serbia making walnut liqueur, similar to this your recipe just without wine and spices. It needs 40 walnuts cracked, 1kg of honey or sugar, but it is better taste with honey. 1l alcohol, we are using alcohol made from wine. Keep it closed in glass containers on sun for 40 days. Remove walnut and you can drink it.

Bonjour à vous trois, je connaissais le vin de noix mais la recette est un peu différente, ici dans le 33, ma tante faisait ainsi : après les vendanges fin septembre 40 feuilles de noyer 40 morceaux de sucre pendant 40 jours pour 1 litre de vin, c’est tout. Ceci dit c’est de mémoire car j’avais 10 ans et que j’en ai maintenant 63, LOL. Bisous à vous et merci pour vos partages ❤

  11. Eh bien, nous faisons macérer les noix (vertes) concassées dans de l'alcool à 96 % (généralement 3 litres) pour en faire une eau-de-vie savoureuse.

    La « fermentation » dure environ un an avant que la boisson ne soit prête à être consommée.

    Le « moût » est pressé à l'aide d'un vieux pressoir manuel, puis le résultat est dilué.

    Nous obtenons la teneur en alcool finale en diluant le moût avec de l'eau de source. (environ 45 % d'alcool)
