Calabrese Mostaccioli

These famously hard and dry cookies are traditionally baked without added fat or refined sugar. Theyโ€™re meant to be dunked into dessert wine or coffee.

Ingredients:

– 700-750 grams 00 flour
– 500 grams of honey
– 3 large eggs, plus an egg yolk for brushing the loaves before baking
– 2 teaspoons baking powder
– A pinch of salt

Mix 700 grams of flour with the salt and baking powder. In a separate bowl, whisk the honey and eggs until smooth, about a couple of minutes. Then, sift in the flour mixture and whisk until it forms a tacky dough. Flour your board with a little flour and roll the dough into a smooth ball. Add just a little flour at a time until you have a smooth, soft-inside ball.

Split the dough into two equal parts and roll each into a log. Gently place the logs on a parchment-lined baking tray, spaced apart. Brush the tops of the loaves with the egg yolk. Bake in a preheated oven at 350ยฐF for 30-35 minutes, or until golden on top and a toothpick inserted comes out clean. Cool completely, then cut the loaves into angel-shaped slices, about 1 inch thick. These cookies are best enjoyed dunked in a cup of your favourite coffee!     But…biscotti is plural so you can enjoy your espresso with a biscotto or some biscotti
