hot take – Italian pizza is just ok, the US has perfected the craft and created many variations which are arguably better. Give me a thin and crispy pizza any day over a floppy one that was baked in 90 seconds.

If you can taste the wood in a pizza, you have poor fire management. A properly burning wood fired pizza oven (or smoker for meat) will have an almost imperceptible amount of smoke, far too little smoke to add flavor in the few minutes it takes to cook a pizza. Improperly burning wood will produce a smoke that is intense but with an acrid, off-putting taste.

I have a wood fire oven and a propane one and it makes absolutely no difference
Oh it’s pizza if it’s not made with wood… but it is BETTER pizza if it is!
