
I used 250g semolina, 112g hot water. Combined until it formed a ball, then kneaded for 5 minutes. Let rest covered in Saran Wrap for 15 minutes, then kneaded until smooth (it was really hard still). I boiled immediately after shaping.

I think you need more water. Maybe around 120 grams. Also letting the rest longer – up to one hour – could make it more smooth. Finally – and this is just a guess but your gnochetti looks a bit big/thick. Try make them smaller next time. Good luck!
