Smoked Jalapeño Artichoke Dip 🥓🎆🦅
Ingredients:
4 Jalapeño Peppers (cut one into coins, then finely dice the other three)
1 14 oz Jar of Artichoke Hearts, drained and chopped
1/2 of an Onion, Finely Diced
8 oz Cream Cheese, Softened
3/4 cup Mayonnaise
1/2 Cup Parmesan Cheese, Grated
1 cup Mozzarella Cheese, Shredded
1 tsp of The Bearded Butcher Hot Blend
1 tsp of The Bearded Butcher Bold Blend
1 tsp Lemon Zest
2 Tbsp Reserved Bacon Grease
Garnish: 4 oz Cooked, Chopped Bacon, and Chives
Instructions:
Preheat your smoker to 350°F. Cook 4 oz. bacon in a skillet until crispy, then remove and reserve for garnish, leaving the bacon grease in the skillet. Sauté the diced jalapeños and onions in the bacon grease for about 10 minutes, until softened.
In a medium bowl, beat the softened cream cheese and mayonnaise until smooth. Stir in the chopped artichokes, sautéed onions and jalapeños, 1/4 cup Parmesan, and 1/2 cup mozzarella. Season with 1 tsp each of The Bearded Butcher Hot Blend and Bold Blend, then mix well.
Spread the mixture into the skillet and smoke for 10 minutes. Stir, then top with the remaining mozzarella and Parmesan, plus jalapeño slices. Return to the smoker for 20 minutes, or until hot and bubbly with golden cheese.
Let cool for a few minutes, then finish with an extra sprinkle of Hot Blend, the reserved chopped bacon, and fresh chives. Serve warm with tortilla chips or crostini. 🔥🇺🇸🥓
