🛒 INGREDIENTS (Serves 2)
The Base & Sauce:
🍝 200g High-quality Spaghetti
🧀 120g Gorgonzola Dolce (or any creamy blue cheese)
🥛 100ml Heavy Cream (30-33%)
🧈 20g Unsalted Butter
🧄 1 Garlic clove (crushed)

The Topping:
🍐 1 Ripe but firm Pear (diced)
🥣 1 tsp White Miso Paste (Shiro Miso)
🍯 1 tsp Honey (plus 1 tsp for walnuts)
🥜 A handful of Walnuts
🌿 Fresh thyme

👩‍🍳 STEP-BY-STEP
1. The Crunch: Toast walnuts in a dry pan until fragrant. Drizzle with a little honey and a pinch of salt, toss for 30 seconds until caramelized, then move to parchment paper. Once cooled, roughly chop.

2. The Miso-Pear: In a small bowl, whisk miso paste, 1 tsp honey, and 1 tbsp warm water until smooth. In a pan, melt half the butter with a sprig of thyme and the crushed garlic. Toss in the diced pear, sauté for 2 minutes, then pour in the miso mixture. Cook for 2-3 minutes until glossy and tender. Transfer to a plate.

3. The Sauce: Cook spaghetti in salted water, stopping 2 minutes before the package directions (firm al dente). Reserve 1 cup of pasta water! In the same pan you used for the pears, add the remaining butter, heavy cream, and crumble in the blue cheese. Simmer on low heat, stirring until smooth.

4. The Emulsion: Transfer the pasta straight into the cheese sauce. Add about 50-70ml of the reserved pasta water. Toss vigorously over medium heat for 1-2 minutes until the sauce becomes silky and perfectly coats the pasta. Turn off the heat and gently fold in most of the pears.

5. Serve: Plate the spaghetti high, top with the remaining miso-pears, the crunchy candied walnuts, fresh thyme.
