

The steel is gonna be about 11KG or slightly more, I see an opportunity to shave some weight off by adding large corner radius. Pizzas are a circle after all but I don’t want to risk losing heat retention for back to back pizzas. Thoughts?

Fire hot. Pizza hot. Think you’re overthinking it chef. Such a small difference, you won’t notice any difference.
The weight difference won’t be much but I think its a good idea because sharp corners can be pretty annoying when you move it around. I have one steel with 90-degree corners and the other rounded and I have to be very careful moving the pointy one.
So you plan on 12mm steel?
I would probably go to a local metalworker, and ask them for an offcut.
What do you expect to pay for it?
A sharpish corner on a 11kg slab of steel can stab the living crap out of whatever it lands on. Round the corners. Trust me on this, the 27 stitch scar on my shin from a 1/4” (6mm) slab or plate is begging you to round the corners.
