This quick pasta for one is made with macaroni, fresh tomatoes, portabella mushrooms, garlic, parsley, and basil, all sautéed in olive oil. I added a splash of wine and my homemade chicken stock to create a light, flavorful sauce, then tossed it all with the pasta and finished it with plenty of freshly grated Pecorino Romano cheese.

It only takes a few minutes to make, but sitting down to a homemade meal is so much more satisfying than takeout. Just because you’re cooking for one doesn’t mean you can’t treat yourself to something delicious.
