🧀 Cheesy Beef Tortellini Casserole
Tender cheese tortellini baked with savory ground beef, tomatoes, and loads of melty cheese. This easy, hearty casserole is pure comfort food perfect for busy weeknights and guaranteed to have everyone asking for seconds! 😍
Servings: 6–8
Prep Time: 10 minutes
Cook Time: 25–30 minutes (oven) or 4–6 hours on LOW (slow cooker)
Ingredients:
1–1½ lbs ground beef
1 small onion, diced
3 garlic cloves, minced
1 (20–24 oz) package fresh or frozen cheese tortellini
1 (14.5 oz) can diced tomatoes (or Rotel for spice)
1 (24 oz) jar marinara sauce
1 tsp Italian seasoning
½ tsp garlic powder
Salt & black pepper, to taste
2–3 cups shredded cheddar or mozzarella cheese (or a blend)
Fresh parsley or cilantro, chopped (for garnish)
Instructions:
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
In a large skillet, cook the ground beef with diced onion until browned. Drain excess grease. Add minced garlic and cook 1 minute. Stir in diced tomatoes, marinara sauce, Italian seasoning, garlic powder, salt, and pepper. Simmer for 5 minutes.
Spread half the tortellini in the bottom of the baking dish. Top with half the meat sauce, then half the shredded cheese. Repeat the layers.
Cover with foil and bake for 20 minutes. Remove foil and bake another 8–10 minutes until the cheese is bubbly and golden.
Let rest for 5 minutes. Garnish with fresh chopped parsley or cilantro.
Slow Cooker Version: Layer everything in the crockpot and cook on LOW for 4–6 hours.
Serving Suggestions:
Serve with garlic bread, a crisp green salad, or roasted vegetables. Great for potlucks and meal prep!
Tips:
Use frozen tortellini — no need to thaw.
Add spinach, bell peppers, or mushrooms for extra veggies.
Make it spicier with Rotel tomatoes or red pepper flakes.
