



2nd, paler pizza was slightly less proofed and didn’t have ring formed like I’d like.
Pizza oven without toppings first helped keep crust nice and chewy/soft, but avoided burn with oils/cheese. Need to get some temps dialed in and work with my proofing time, but this is an improvement from my previous batches. Going to go by weight next time and maybe adjust moisture up a bit depending on how that goes.

These look solid already, dude. The jump in quality is super obvious.
Weighing everything is gonna change your life, especially with hydration tweaks. I’d also try a slightly longer proof on the paler one and maybe a tiny bump in oven temp so you get that ring without nuking the toppings.
