TIKKA PIZZA

• 500g Chicken breast
1/2 Cup Greek yoghurt
• 1 Tbsp Minced ginger
• 4 Garlic cloves minced
• 1 Tbsp lemon juice
• 1 Tsp Coriander powder
• 1 Tsp Paprika
• 1/2 Tsp Turmeric
• 1/2 Tsp Cumin
• 1/2 Tsp Mild chilli powder
• Oil to brush skewers

  1. Add all ingredients (except chicken) to a bowl and mix well then add chicken chopped up and mix well cover and let marinade for at least 3 hours

  2. Add chicken pieces to skewers and cook on a griddle or under the grill for about 12 minutes turning often

CRUST
• 2 + 1/4 Cup spelt flour
• 1 Tsp Salt
• 1 Tsp Sugar
• 2 + 1/4 Tsp instant yeast
• 1/2 Cup Greek yogurt
• 1/3 Cup Warm water
• 1 Tbsp Oil
• 4 Garlic Cloves minced
• 2 Tbsp unsalted butter

  1. Whisk together flour salt sugar and yeast in a bowl then add yoghurt and oil and mix well then add the warm water bit by bit until it forms into a ball then knead gently for about 10 minutes till smooth

  2. Put it in a large bowl covered with a kitchen towel for about 1 hour until it doubles in size then knead a few times then add on top of some parchment paper

  3. Roll the dough out into an oval shape then pinch the edges to form a crust
    Add to a baking sheet with parchment paper and cook on 425f for 10 minutes

  4. Add the butter to a saucepan on low heat till melted then add garlic and cook for about 4 minutes then brush the pizza base with the garlic butter

PIZZA

  1. Add the chicken tikka, jalapeños and 250g of mozzarella cheese to the half cooked garlic butter crust

  2. Add back onto baking sheet and cook on bottom shelf for 10 minutes
    Remove and put under the grill for a few minutes until golden brown and cheese is bubbling
