Golden, crispy on the outside and creamy on the inside, these Italian Arancini are stuffed with cheesy risotto and served with rich marinara sauce. The perfect appetizer, snack, or party favorite!

**Ingredients:**

* 3 cups cooked risotto, chilled
* 1 cup mozzarella cheese, cubed
* ½ cup grated Parmesan cheese
* 2 eggs, beaten
* 1 cup all-purpose flour
* 1½ cups Italian breadcrumbs
* 1 tsp garlic powder
* 1 tsp Italian seasoning
* Salt and black pepper to taste
* Vegetable oil for frying
* Fresh parsley, chopped

**For Serving:**

* 1 cup marinara sauce
* Extra grated Parmesan cheese

**Directions:**

1. Mix chilled risotto with Parmesan cheese.
2. Scoop about ¼ cup of risotto and flatten in your hand.
3. Place a cube of mozzarella in the center and shape into a ball.
4. Roll each ball in flour, then beaten eggs, and finally breadcrumbs mixed with garlic powder and Italian seasoning.
5. Heat oil to 350°F (175°C).
6. Fry the arancini in batches for 3–4 minutes until golden brown and crispy.
7. Remove and drain on paper towels.
8. Sprinkle with Parmesan cheese and fresh parsley.
9. Serve warm with marinara sauce for dipping.
