
Never made a carbonara before so I thought I should give it a go since this weather feels like peak Italian summer.
However, I had chorizo so I used that instead of guanciale. And I threw some edamame beans in because why not.
Sauce was one egg and one egg yolk, plenty of freshly grated parmesan and some pasta water. I somehow managed to run out of pepper so I had to forgo that.
I topped it off with a sous vide and then seared chicken breast just to really piss off the purists.
Delicious and extra saucy. Come at me.

And you still haven’t made carbonara. That ain’t even close. Come up with something else to call it cause that for damn sure isn’t carbonara
